  • 1 Grill / Smoker
  • 1 Grill-safe baking sheet or pizza stone (optional)
  • 1 Basting brush
  • 1 Pizza Peel

Ingredients
  

  • 1 Pre-made pizza crust
  • Olive oil
  • Finely chopped garlic
  • Shredded mozzarella cheese
  • 1 Store-bought rotisserie chicken, shredded and chopped
  • 1/2 Thinly sliced red onion
  • BBQ sauce

Instructions
 

Prep the Pizza

  • Brush olive oil over the entire crust—make sure you hit the edges.

  • Sprinkle chopped garlic across the top, then use the brush to lightly spread it around. (Not too much just a little for taste)

  • Add mozzarella cheese in a nice, generous layer.

  • Top with shredded rotisserie chicken, spreading it evenly.

  • Add thin red onion slices for crunch and a little bite.

  • Drizzle BBQ sauce in a zigzag pattern across the top.

For a Large Grill (3+ burners):

  • Light the left and right burners on high. Leave the center burner off for indirect heat.
  • Place the pizza in the center and close the lid.
  • Grill for about 10 minutes, or until the crust is crisp and the cheese is melted.

For a Small Grill (2 burners or less):

  • Light one side only of the grill on high.
  • Place the pizza on the unlit side.
  • Grill with the lid closed for 5 minutes, then rotate the pizza 180°.
  • Grill for another 5–7 minutes (12 minutes total for extra crisp), checking the bottom of the crust for doneness.
